Almost instant mackerel pate

I had complaints that my recipe for chicken pie wasn’t easy enough. So here’s one no-one can complain about, and no boring preamble either. If you have a food processor or blender it’s almost instant, and it’s pretty damn quick even if you haven’t. Makes a very fine lunch with some ripe tomatoes or a spoonful of gooseberry or rhubarb chutney, and especially good for a picnic on a bit of crusty baguette. Eat in the garden in the sunshine.

Smoked mackerel pate

  • 2 fillets smoked mackerel, skin removed
  • 100g soft cheese
  • 1 tbsp creme fraiche
  • 1-2 tsps horseradish sauce (depending on strength and preference)
  • Squeeze of lemon juice
  • Salt and pepper

Put everything in a blender or food processor. Whizz till smoothish. Taste and adjust seasoning. Decant into a dish and chill. Eat with thin hot brown toast or crusty bread. (If you don’t have a blender or food processor, you can pound the fish in a pestle and mortar, or just break it up as small as you can with your hands or a fork, then mix the other ingredients in.)
